Flatbreads are excellent when made on a barbeque or grill over a campfire. Especially when topped with delicious seasonal ingredients. So for your next autumn camping adventure, why not try this delicious Rabbit Sausage and Potato Flatbread? It’s healthy and delicious for a snack or an entree.
Pizzas and flatbreads are one of my favorite things to make over a campfire. The open flame mimics the classic woodfired pizza oven. Don’t bother with an expensive pizza stone; place the dough on the grate. Trust me. It will not fall through to the fire. Grill both sides until firm, add your toppings and finish the cook with a piece of tinfoil covering the pie for an even cook.
What makes this flatbread special is the unique toppings. All year round, I like to use seasonal ingredients. This snack is a tribute to fall when harvesting potatoes and hunting rabbits are in full swing in eastern Oregon and Idaho.
While I used rabbit sausage for this recipe because it was what was on hand, any type of spicy sausage will work. Or use mushrooms or plant-based meat for a vegetarian option!
How to Make Rabbit Sausage and Potato Flatbread
- Mix together the ingredients for the dough.
- Gently knead on a floured surface.
- Let rise in a warm space for about an hour.
- While the dough is rising, grate cheese and thinly slice potatoes.
- Divide the dough into 2 pieces and roll out on a floured surface to desired thickness and size.
- Place dough on greased grate over a campfire or barbeque.
- Grill for approximately 5 minutes a side. Cooking time will depend on the size and thickness of the dough and the heat of the fire.
- While the dough is cooking, saute the sausage.
- Add toppings to flatbread dough, layering cheese, potatoes, and then sausage.
- Cover with foil and cook for another 5-7 minutes.
- Garnish with chopped rosemary.
If you are in a pinch and do not have the time to make your own dough, check out the pre-made dough in the deli section of stores like Whole Foods, or for backpacking trips use pre-made naan bread. Both are delicious substitutions in this recipe.
And nothing goes better with flatbread or a slice of pizza than a great beer. For this recipe, I like to enjoy an IPA. India Pale Ales or IPA were created by British sailors looking for a brewing technique that would last for their voyages around the horn of Africa. It has a fruity and piney flavor that pairs well with the sausage on this flatbread.

Rabbit Sausage and Potato Flatbread
Ingredients
For the dough…
- 2 cups flour
- 1/2 tsp sugar
- 1 tsp instant dry yeast
- 1 tsp kosher salt
- 3/4 cups warm water
For the flatbread…
- 8 oz rabbit sausage
- 1 cup fontina cheese shredded
- 1 red potato thinly sliced
- 2 tbsp parmesan cheese shredded
- 2 sprigs rosemary finely chopped
Instructions
- Mix together flour, sugar, yeast, and salt. Slowly drizzle in water until dough forms. Turn dough onto a lightly floured surface. Knead into a round ball. Let rest in a lightly greased bowl for 1 hour.
- While the dough is rising, start campfire or barbeque.
- Divide dough into pieces. Roll into 2 pieces about 1/4 inch thick. Place on greased grill and bake for 5 minutes each side.
- While the dough is baking on one side of the grill, brown sausage in small skillet.
- Top dough with fontina cheese, then layer with potato and sausage. Return to grill and cover. Cook for another 5-7 minutes.
