Well, folks, it’s that time of year again – the snow is falling, the lifts are turning, and all I want after a long day of powder hunting is something hot, hearty, and filling to warm me up from the inside out. So, you know what I’m craving? A big pot of Hearty Bison Chili.
That’s right, I said bison – a healthier and more flavorful alternative to beef. This chili is packed with rich bison goodness, tender beans, and a variety of peppers and seasonings. It’s the perfect comfort food to refuel after shredding the slopes. So grab yourself a steaming bowl, pull up a chair by the fire, and get ready to share my recipe for the best bison chili around (yep… it’s won contests!). Your taste buds and belly are in for a real treat!
Ingredients for Bison Chili
- Bison
- Onion
- Red Bell Pepper
- Yellow Bell Pepper
- Habanero Pepper
- Garlic
- Tomato Paste
- Brown Sugar
- Beef Stock
- Beer (Preferably IPA)
- Canned Crushed Tomatoes
- Pinto Beans
- Oil
- Salt and Pepper
- Spices, including Cayenne, Cumin and Paprika
- Garnishes, such as sour cream, charred corn, shredded cheddar cheese and jalapenos
In my opinion, chili is one of the perfect foods for a day on the mountain. Skiing in cold weather can increase calorie expenditure, and consuming a warm and satisfying meal like chili can help keep the body temperature up. The warmth of the perfect bowl can also be comforting in cold conditions.
For New Year’s 2023, I celebrated with friends doing one of my favorite activities – skiing – at one of my favorite ski resorts in the West. This year, we were a little ahead of the snowfall, but it was a great time nonetheless! And, of course, while on the mountain, we couldn’t help but pop into the best “on the mountain” venue out there – The Roundhouse. My lunch order was the bison chili that reminded me of my own award-winning recipe.

So, I’ve gotta confess something. Even though this is the first time I am sharing this recipe on the site, this chili has been in my rotation for several years. Better yet? I’ve even won TWO chili cook-offs with it! The secret is the bison that brings a special twist and the habanero that adds the perfect kick.

This hearty bison chili will keep chilled in a fridge or cooler for three days. Alternatively, you can freeze and store it for up to eight weeks. - Where do I find ground bison?
More and more major grocery chains are carrying bison. In Bend, you can even find it at Safeway. However, if your local market is out of stock or you are looking for the highest quality out there, I suggest placing an order with Jackson Hole Buffalo Meat Co. (P.S. For me, there are two options. If you are having an extended post-ski tailgate, you can reheat or cook this chili on a camp stove. For a quicker option, bring your chili along in a thermos. My favorite is the Rambler Jug from Yeti. This literally keeps soup piping hot for 8 hours.
- How should I serve my bison chili?
Oh my gosh! There are so many options! Keep it simple with a bowl and a slice of cornbread. Try it “walking taco” style with a bag of Fritos. Or carb load for those afternoon runs and combine it with your favorite mac and cheese recipe for a fantastic chili mac.

Hearty Bison Chili
Ingredients
- 2 tbso vegetable oil
- 1 onion finely chopped
- 1 red pepper finely chopped
- 1 yellow pepper finely chopped
- 2 habanero peppers seeded and minced
- 1 lb ground bison
- 4 cloves garlic grated
- 1/2 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 4 tbsp tomato paste
- 2 tbsp brown sugar
- 1 cup beef broth
- 1/2 cup beer preferably IPA
- 32 oz pinto beans drained and rinsed
- 28 oz crushed tomatoes
- salt and pepper to taste
- sour cream for garnish
- shredded cheddar cheese for garnish
- sliced jalenpeno for garnish
- cilantro for garnish
Instructions
- Heat oil in a large stock pot. Add onions and cook for 1-2 minutes. Follow with adding red, yellow and habanero peppers. Cook until soft.
- Add bison to pot. Break up meat with a wooden spoon. Brown on all sides until cooked, about 10 minutes. Add garlic and cook for another minute.
- Stir in chili powder, paprika, cumin, tomato paste, and brown sugar. Add beef broth, beer, beans and crushed tomatoes. Bring to a boil. Reduce heat to low and let simmer for 2 hours. Season with salt and pepper.
- Serve warm with desired garnishes.

There appears to be something missing however – there is clearly not enough broth, beer or water (other liquid?) to cook the large quantity of pinto beans. Suggest you modify by adding more liquid. I doubled beer and broth. Still cooking …
Also I suggest increasing the quantity of bison and/or reduce quantity of beans – if you want a meaty chili!
