As the days start to chill and snow starts to fall in the mountains, there is nothing like a hot soup or stew to warm you after a long morning hiking in the woods. Today, my post-hiking lunch meal was a Thai Peanut Soup with Shrimp Meatballs

Hiking is one of my favorite forms of exercise and Oregon offers a multitude of great hiking spots. While there are many close to urban areas (like right out my backdoor) driving to some of the more rugged areas can offer you peaceful solitude while enjoying breathtaking views.

After hiking I’m usually STARVING and want something filling and nutritious and soup is my favorite.

Assemble your ingredients and prep your soup base ahead of time so when hunger strikes you’ll be ready to whip up an easy yet fulfilling meal in no time at all… whether that’s at home or re-heating using a backpacking stove on the trail.

This Thai Peanut Soup with Shrimp Meatballs will satisfy your cravings all year round. One of the things I love about this soup is that it transcends the season. In the warm summer weather, I find the shrimp meatballs light and refreshing. This soup also is the perfect fall and winter meal. It’s full of delicious, warming ingredients like lemongrass, ginger, and dried Thai chilis.

The broth itself has such fantastic flavor and the additional protein from the shrimp makes it even more satisfying and filling. It’s perfect if you’re craving something sweet, spicy and want something healthy too.


Steps to Make Thai Peanut Soup with Shrimp Meatballs

  1. Combine ingredient for meatballs food processor and pulse into well combined.
  2. Form mixture into balls and chill.
  3. At camp, prepare soup base.
  4. Steam meatballs for 10 -12 minutes.
  5. Use hot water from steaming meatballs to cook rice noodles.
  6. Combine soup, noodles and meatballs.
  7. Garnish with peanuts, cilantro.

Thai Peanut Soup with Shrimp Meatballs

Equipment

  • Bamboo Steamer

Ingredients

For the meatballs…

  • 1 lb shrimp meat
  • 2 cloves garlic grated
  • 1/4 cup scallions diced
  • 1 tsp ginger grated
  • 1/4 cup water chestnuts sliced
  • 1 tsp soy sauce
  • 2 tsp honey
  • 1/2 tsp rice vinegar
  • 1/2 tsp sesame oil
  • 1 egg
  • 3 tbsp corn starch

For the soup…

  • 2 tbsp red Thai curry paste
  • 13.5 ounces coconut milk
  • 2 cups vegetable broth
  • 1 tbsp fish sauce
  • 2 cloves garlic grated
  • 1 tbsp ginger grated
  • 3/4 cup peanut butter
  • 14 ounces rice noodles
  • cilantro
  • peanuts toasted and chopped
  • lime

Instructions

At home…

  • Assemble all ingredients in a food processor. Pulse until mixture is well-combined. Use hand to form balls approximately 1 inch in diameter. Chill or freeze depending on when you will cook them.

At camp…

  • Combine curry paste, coconut milk, vegetable broth, fish sauce, garlic, and ginger. Bring to boil and then reduce to simmer for 15 minutes. Add peanut butter and cook for another 5 minutes and keep warm.
  • Bring water to a boil in a medium pot. Place steamer on top of the pot. Steam shrimp meal balls for 10 minutes and then set aside. Remove pot from heat. Add noodles and soak for 10 minutes.
  • Add noodles and meatballs to the soup base. Garnish with cilantro, peanuts, and lime juice.

Notes

No steamer? The meatballs can also be pre-baked at home in a 350 degree oven on a greased cookie sheet for 10 minutes.
