Chinese Smoked Duck Legs with Spicy Green Beans

Ingredients

For the Duck...

  • 4 duck legs
  • 1/4 cup rice wine
  • 1/4 cup brown sugar
  • 1 tbsp Chinese 5 spice
  • 1 tbsp dark soy sauce
  • 1 tbsp shallot minced
  • 2 cloves garlic minced
  • 6 sprigs cilantro chopped

For the Green Beans...

  • 1/2 lbs green beans trimmed
  • 2 red chili peppers sliced
  • 1 tbsp sesame oil
  • 1 tsp salt

Instructions

For the Duck...

  • Prick the skin of the duck legs with a fork or score with a knife. Be careful to only score the skin and not the meat of the duck.
  • Mix together the ingredients for the marinade.
  • Marinate the duck overnight (12 - 24 hours) in a sealed plastic bag in the fridge or a coooler.
  • Heat grill or fire to low heat (180 F degrees). Place legs directly on grate and smoke covered (use foil if on the fire) for 4 1/2 hours.

For the Green Beans...

  • With 45 minutes left to cook on the duck, toss beans and peppers in oil. Season with salt. Wrap in a foil packet and cook for remainder of the time.
