Rabbit Sausage and Potato Flatbread

Ingredients

For the dough...

  • 2 cups flour
  • 1/2 tsp sugar
  • 1 tsp instant dry yeast
  • 1 tsp kosher salt
  • 3/4 cups warm water

For the flatbread...

  • 8 oz rabbit sausage
  • 1 cup fontina cheese shredded
  • 1 red potato thinly sliced
  • 2 tbsp parmesan cheese shredded
  • 2 sprigs rosemary finely chopped

Instructions

  • Mix together flour, sugar, yeast, and salt. Slowly drizzle in water until dough forms. Turn dough onto a lightly floured surface. Knead into a round ball. Let rest in a lightly greased bowl for 1 hour.
  • While the dough is rising, start campfire or barbeque.
  • Divide dough into pieces. Roll into 2 pieces about 1/4 inch thick. Place on greased grill and bake for 5 minutes each side.
  • While the dough is baking on one side of the grill, brown sausage in small skillet.
  • Top dough with fontina cheese, then layer with potato and sausage. Return to grill and cover. Cook for another 5-7 minutes.
