Dutch Oven Wild Blackberry Cobbler

Ingredients

For the Filling...

  • 1 tbsp butter
  • 4 cups wild blackberries
  • 1/4 cup sugar
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla

For the Topping...

  • 1 cup flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 1/4 cup buttermilk
  • 6 tbsp butter melted and cooled
  • zest of one lemon
  • powdered sugar

Instructions

  • Start by prepping your campfire per the instructions in the outdoor cooking section of this site. For this recipe, 17 briquettes, white and glowing, are needed.
  • Grease Dutch Oven with 1 tbsp butter. In a mixing bowl, combine sugar, cinnamon and vanilla to berries. Mix well and add to Dutch Oven.
  • In a large bowl, sift together flour, baking soda and salt.
  • In a separate bowl, combine with flour mixture with buttermilk, sugar, melted butter, and lemon zest until soft dough forms. Drop dough over blackberries in even clumps. The dough will not completely cover the fruit. Place lid on Dutch Oven.
  • Bake cobbler on campfire for 40 minutes by placing 6 briquettes on the bottom and 11 on the lid. Cool for 5-10 minutes. Sprinkle with powdered sugar before serving.
